Long covid seems to be related to immune mechanisms which are persistent after the infection has resolved. Our normal immune response tends to be stopped after about 21 days as a protection to prevent overactivation.
Why would it be persistent in long covid?
My clinical observation is that specific food intolerances may be driving these symptoms. Years of listening to patients has taught me to not overlook the principle that "you are what you eat".
Food is medicine - meaning, it can heal as much as harm.
